Olive Trees
The olive trees of the farm are extended for about 12 hectares on the northern part of the Martani hills. Located on two mountainside of the same valley at a height varying between 400 and 600 above the sea level they are completely surrounded by oaks and holms forest.
The centenary olive grove is divided into several areas, each of which has a dominant variety.
AREA “DI VENTO”
Varieties: Ancient Moraiolo, called “ciumignola”
AREA “MARZOLANO”
Varieties: Dolciagogia, Frantoio, Moraiolo, Rajia
AREA “CAPRARECCIA”
Varieties: Moraiolo and ancient moraioli
Most of the olive trees are located in terraced areas with high slopes, thus making manual plant care essential. The proximity of the woods and the Mediterranean climate make possible an extremely natural conduction of the entire olive grove ensuring any type of treatment superfluous. The olive harvest is done manually with the use of hand rakes that respect the integrity of the plants; the olives are harvested in small 15 kg boxes and ground within 48 hours.
